Ceylon Pepper – Black Cracked

Black pepper, also known as the “King of Spices,” is a popular seasoning used in cuisines worldwide. It is obtained from the fruit of the Piper nigrum plant, which is a vine. Piperine, an alkaloid presents in the white and middle of the peppercorn, gives black pepper its spiciness. It has a sharp, pungent aroma, and is an essential ingredient in almost every type of recipe.

It is also the world’s most traded spice, and is one of the most frequent spices added to cuisines worldwide.

Black pepper (Piper nigrum),  is a flowering vine in the family Piperaceaecultivated for its fruit, which is generally dried and used as a spice  and seasoning.

Pepper gets its kick from the compound Pepperine that is found in the white and middle of the Peppercorn.

Black Pepper has a sharp, pungent aroma and flavour. A pinch of black pepper is added to almost every type of recipe imaginable.

Ceylon Pepper is distinctly favoured worldwide as it is quite rich in Pepperine, the alkaloid which provides it a distinct pungency. Therefore, Ceylon Pepper from Sri Lanka fetches a premium price in the international spice market.

The most expensive Red Peppercorn variety occurs when the berries are left on the vine for longer than normal.

Pepper loses its flavour and aroma through evaporation. Keep it in an airtight container and out of the sun.

 The taste of Sri Lankan black pepper is lavishly aromatic, with floral and citrus notes, while dominating a strong pungency. Extracts of black pepper – Pepperine, Oleoresin and essential oil- are also extracted from the whole seed and have applications as both spice and flavouring agents in the food industry, major commercial implementation in the perfumery and the pharmaceutical industry.

Depending on the time of harvest and the post-harvest process, there will be different types of pepper: green pepper, black pepper, red pepper and white pepper. For black pepper, the Piper nigrum berries are harvested when green and slightly immature, then it’s blanched and sun-dried. This makes it very rich in essential oil. The black colour results from the oxidation that occurs during drying.

Researchers say the benefits of black pepper have been known for centuries in long-established Eastern medicine, in which it is used to treat cholera, diarrhoea, and other gastrointestinal diseases. Researchers also have specified that Black Pepper also helps quitting smoking, it is full of antioxidants, it helps control type 2 diabetes, it helps overcome swallowing problems, and fights bacteria.
